Ingredients

  • 400g of thin-sliced beef
  • 400g of thin-sliced chicken cutlet
  • 200g of sliced onion
  • 200g of ginger in pieces
  • 800g of fried potato sticks
  • 100g of ginger powder
  • 50g of pepper powder
  • 3 eggs
  • 200g of flour
  • 1 liter of cold water
  • 2 tablespoons of sake
  • 2 tablespoons of soy sauce
  • Salt and pepper to taste
  • Oil for frying

Method

  1. Slice the beef and chicken cutlet into thin, impalpable slices.
  2. Prepare the marinade by mixing water, soy sauce, sake, salt, and pepper.
  3. Marinate the meat and chicken slices for at least 30 minutes.
  4. Coat the meat and chicken slices with flour, dip them in beaten eggs, and finally coat with ginger and pepper powder.
  5. Fry the slices in hot oil over medium-high heat until they become crispy.
  6. Coat the fried potato sticks with ginger and pepper powder, then fry them in hot oil over medium-high heat.
  7. Serve the kushikatsu hot on a wooden skewer, accompanied by soy sauce and ginger.

The story

Originating in Osaka, kushikatsu emerged during the Edo period when innkeepers used leftover meat to create appetizing skewered dishes.
