Ingredients

  • 400g of kumara (sweet potatoes)
  • 2 eggs
  • 100g of flour
  • 50g of sugar
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper
  • oil for frying
  • Balsamic vinegar for serving (optional)

Method

  1. Peel and cut the kumara into small cubes.
  2. In a bowl, mix the eggs, sugar, salt, and pepper.
  3. Add the flour and mix until the batter is well combined.
  4. Add the kumara cubes to the batter and mix well.
  5. Heat the oil in a frying pan.
  6. Fry the fritters in slices until golden.
  7. Drain on a paper towel and serve with balsamic vinegar if desired.
