Kuku Poro

Ingredients
- 1 kg of potatoes
- 2 onions
- 1 zucchini
- 1 courgette
- 1 red onion
- 1/2 kg of choice vegetables
- 3 eggs
- 3 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon of saffron (optional)
- 1 teaspoon of apple cider vinegar (optional)
Method
- Peel and cut the potatoes into small cubes. Boil in salted water for 10-15 minutes, then cool down.
- Slice the onions, zucchini, courgette, and red onion thinly.
- In a non-stick pan, sauté the vegetables with olive oil and apple cider vinegar (if using) for 10-15 minutes, until they are soft.
- In another bowl, mix the eggs, salt, and pepper. Add the sautéed vegetables and potatoes.
- Pour the mixture into the non-stick pan and cook over medium heat for 10-15 minutes, stirring occasionally to ensure even cooking.
- Once cooked, let it rest for 5 minutes before serving. Gently flip to serve.
