Ingredients

  • 1 kg of potatoes
  • 2 onions
  • 1 zucchini
  • 1 courgette
  • 1 red onion
  • 1/2 kg of choice vegetables
  • 3 eggs
  • 3 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of saffron (optional)
  • 1 teaspoon of apple cider vinegar (optional)

Method

  1. Peel and cut the potatoes into small cubes. Boil in salted water for 10-15 minutes, then cool down.
  2. Slice the onions, zucchini, courgette, and red onion thinly.
  3. In a non-stick pan, sauté the vegetables with olive oil and apple cider vinegar (if using) for 10-15 minutes, until they are soft.
  4. In another bowl, mix the eggs, salt, and pepper. Add the sautéed vegetables and potatoes.
  5. Pour the mixture into the non-stick pan and cook over medium heat for 10-15 minutes, stirring occasionally to ensure even cooking.
  6. Once cooked, let it rest for 5 minutes before serving. Gently flip to serve.
