Koulouri (Grain Rings)

Koulouri, crunchy and flavorful grain rings, are a traditional breakfast treat in Thessaloniki that shouldn't be missed.

Ingredients
- 250 g of flour
- 100 g of sugar
- 50 g of honey
- 200 ml of oil
- 1 egg
- 1 packet of yeast
- 1/2 teaspoon of salt
- 100 g of crushed almonds
- 100 g of crushed pistachios
- 1/2 teaspoon of cinnamon powder
- 1 teaspoon of powdered sugar
- Water for kneading
Method
- In a bowl, mix the flour, sugar, honey, oil, egg, yeast, salt, and cinnamon powder.
- Gradually add water until the dough becomes homogeneous and no longer sticks to your hands.
- Knead the dough for 5-10 minutes until it becomes smooth and elastic.
- Form small balls with the dough and stretch them into cylinders.
- Shape the cylinders into rings.
- Brush the koulouri with beaten egg and add the almonds and pistachios.
- Preheat the oven to 180°C and bake the koulouri for 15-20 minutes.
- Sprinkle with powdered sugar just out of the oven.
The story
Koulouri have been made in Greece for centuries, but the most famous version comes from Thessaloniki, where they have become a culinary symbol of the city.
