Kouign-Amann

This traditional Breton pastry, Kouign-Amann, is a crispy layer cake covered in golden sugar.

Ingredients
- 350 g of flour
- 250 g of butter
- 100 g of sugar
- 3 eggs
- 1 packet of yeast
- 150 g of granulated sugar
- 1/2 cup of milk
- Honey in abundance for cooking
Method
- Mix the flour, butter, sugar, eggs, and yeast in a large bowl.
- Add the milk and mix well until you get a homogeneous dough.
- Divide the dough into two parts and form two balls.
- Fold the balls once and let them rest for 10 minutes.
- Repeat the folding and resting process two more times in total.
- Form a crust with the dough and cover with sugar.
- Place the Kouign-Amann in a baking dish, cover with granulated sugar, and bake in a preheated oven at 180°C for 30-40 minutes.
- Drizzle with honey immediately after removing from the oven.
The story
Originating in the 19th century, Kouign-Amann is said to have been created by Breton farmers to use up leftover ingredients.
