This traditional Breton pastry, Kouign-Amann, is a crispy layer cake covered in golden sugar.

Ingredients

  • 350 g of flour
  • 250 g of butter
  • 100 g of sugar
  • 3 eggs
  • 1 packet of yeast
  • 150 g of granulated sugar
  • 1/2 cup of milk
  • Honey in abundance for cooking

Method

  1. Mix the flour, butter, sugar, eggs, and yeast in a large bowl.
  2. Add the milk and mix well until you get a homogeneous dough.
  3. Divide the dough into two parts and form two balls.
  4. Fold the balls once and let them rest for 10 minutes.
  5. Repeat the folding and resting process two more times in total.
  6. Form a crust with the dough and cover with sugar.
  7. Place the Kouign-Amann in a baking dish, cover with granulated sugar, and bake in a preheated oven at 180°C for 30-40 minutes.
  8. Drizzle with honey immediately after removing from the oven.

The story

Originating in the 19th century, Kouign-Amann is said to have been created by Breton farmers to use up leftover ingredients.
