  • 400g of rabbit in pieces
  • 2 oranges
  • 2 onions
  • 200g of potatoes
  • 200g of carrots
  • 200g of spinach
  • 2 tablespoons of olive oil
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 teaspoon of lemon juice
  • 1 bay leaf
  • 1 sprig of rosemary

Method

  1. In a large pot, heat the olive oil and sauté the finely chopped onions and garlic.
  2. Add the rabbit pieces and cook until they become dry.
  3. Remove the rabbit from the pot and add the sliced oranges.
  4. Add the cubed potatoes, diced carrots, rosemary sprigs, and bay leaf.
  5. Stir well, then add the rabbit and cook over medium heat for about 20 minutes.
  6. Finally, add the spinach and lemon juice, stir, and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste, then serve immediately.
