Ingredients
- 400g of rabbit in pieces
- 2 oranges
- 2 onions
- 200g of potatoes
- 200g of carrots
- 200g of spinach
- 2 tablespoons of olive oil
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 teaspoon of lemon juice
- 1 bay leaf
- 1 sprig of rosemary
Method
- In a large pot, heat the olive oil and sauté the finely chopped onions and garlic.
- Add the rabbit pieces and cook until they become dry.
- Remove the rabbit from the pot and add the sliced oranges.
- Add the cubed potatoes, diced carrots, rosemary sprigs, and bay leaf.
- Stir well, then add the rabbit and cook over medium heat for about 20 minutes.
- Finally, add the spinach and lemon juice, stir, and cook for an additional 5 minutes.
- Season with salt and pepper to taste, then serve immediately.
