Kombuis Pap and Chicken

A traditional Western Cape dish, delicious Pap and Chicken with vegetables.

Ingredients
- 2 small chickens or 1 large chicken, cut into pieces
- 2 onions, chopped
- 2 carrots, cubed
- 1 pumpkin, cubed
- 1 zucchini, sliced
- 1 red onion, chopped
- 2 cups of almond meal (kombuis pap)
- 3 cups of chicken broth
- 1 packet of chili powder
- Salt and pepper to taste
- 2 tablespoons of olive oil
Method
- In a large pot, heat the olive oil and sauté the onions and red onion until they become golden.
- Add the carrots, pumpkin, and zucchini and cook for 5-7 minutes.
- Add the chicken broth, chili powder, salt, and pepper, and bring to a boil.
- Add the chicken pieces and cook until the chicken is fully cooked.
- In another pot, prepare the kombuis pap by mixing the almond meal with a little water to form a paste.
- Add the kombuis pap to the pot with the chicken broth and cook on medium heat for 10-15 minutes, stirring frequently.
- Serve hot, accompanied by a side salad or green vegetables.
