Ingredients

  • 200 gr of kolo
  • 2 liters of water
  • 1 tablespoon of butter
  • 1 tablespoon of palm oil
  • 1/2 teaspoon of cinnamon powder
  • 1/2 teaspoon of cardamom powder
  • 1/2 teaspoon of ginger powder
  • 1/2 teaspoon of sugar
  • 100 gr of almonds
  • Salt to taste
  • Sour cream for serving

Method

  1. In a pot, bring water to a boil and add the kolo. Cook for 30-40 minutes, stirring occasionally.
  2. In another pot, heat the butter and palm oil in plenty of water. Add the spices and salt, stir well.
  3. Add the cooked kolo and water mixture to the pot with the spices, stir and let it cool.
  4. Clean and cut the almonds into small pieces. Add them to the cooked kolo and mix well.
  5. Serve the kolo warm, topped with sour cream.
  6. Alternatively, you can serve it cold as a dessert.

The story

Kolo porridge, or zavula di kolo, is a traditional dish from the Harar region in Ethiopia, made with kolo, a local grain, and often enjoyed as a breakfast or lunch.
