Knafeh with Cheese

A traditional sweet from Tiberias, Kunafeh Bil Jibn is a pastry made of cheese, shredded phyllo dough, and butter, topped with a layer of sugar cream.

Ingredients
- 1 kg of ricotta
- 200 g of butter
- 200 g of sugar
- 1 liter of milk
- 1 kg of phyllo dough
- 500 g of sugar cream
- 1 teaspoon of vanilla
- Granulated sugar for decoration
Method
- In a pot, mix the butter, milk, and sugar to form a cream. Add vanilla and let it cool.
- In another pot, cook the ricotta with a handful of granulated sugar for 10 minutes, stirring regularly.
- In a large baking dish, layer the phyllo dough, ricotta, and cream, finishing with a layer of phyllo dough.
- Cover with a layer of sugar cream and decorate with granulated sugar.
- Melt the remaining butter and pour it over the sugar cream to create a golden layer.
- Preheat the oven to 180°C and bake for 15-20 minutes, until the surface is golden and the sugar cream is melted.
- Let it cool and serve cold.
The story
Kunafeh Bil Jibn is a traditional sweet from Tiberias, a historic city in northern Palestine. The recipe has been passed down through generations with slight variations depending on the family.
