Ingredients

  • 1 kg of ricotta
  • 200 g of butter
  • 200 g of sugar
  • 1 liter of milk
  • 1 kg of phyllo dough
  • 500 g of sugar cream
  • 1 teaspoon of vanilla
  • Granulated sugar for decoration

Method

  1. In a pot, mix the butter, milk, and sugar to form a cream. Add vanilla and let it cool.
  2. In another pot, cook the ricotta with a handful of granulated sugar for 10 minutes, stirring regularly.
  3. In a large baking dish, layer the phyllo dough, ricotta, and cream, finishing with a layer of phyllo dough.
  4. Cover with a layer of sugar cream and decorate with granulated sugar.
  5. Melt the remaining butter and pour it over the sugar cream to create a golden layer.
  6. Preheat the oven to 180°C and bake for 15-20 minutes, until the surface is golden and the sugar cream is melted.
  7. Let it cool and serve cold.

Kunafeh Bil Jibn is a traditional sweet from Tiberias, a historic city in northern Palestine. The recipe has been passed down through generations with slight variations depending on the family.
