Kibbeh Hijri
A traditional Sidon dish, Kibbeh Hijri is a crispy, meat and rice patty sprinkled with sesame seeds.

Ingredients
- 200 g of beef
- 100 g of rice
- 2 eggs
- 1 tablespoon of oil
- Salt and pepper to taste
- 2 tablespoons of sesame seeds
- 4 people's worth of dried tomatoes
- 1 onion
- 1 tablespoon of red wine vinegar
- 1 tablespoon of sugar
Method
- In a pot, cook the rice with water and oil until al dente. Let it cool.
- In a bowl, mix the meat, egg, rice, salt, and pepper until you get a homogeneous paste.
- Form small balls with the paste and cook them in boiling water for 2-3 minutes. Drain.
- In a pan, heat the oil and fry the meat balls for about 2-3 minutes on each side.
- Sparsely sprinkle with sesame seeds.
- In a bowl, mix the dried tomatoes with red wine vinegar, sugar, and oil. Squeeze the tomatoes to get a pulp.
- Slice the onion thinly and immerse it in the tomato pulp.
- Serve the kibbeh hijri hot with the tomato and onion mixture on top.
The story
Kibbeh Hijri originates from an ancient recipe in Sidon, a coastal city in Lebanon, where sesame seeds were added for a crispy crust.
