Kebab Koobideh

A classic of Iranian cuisine, kebab koobideh is a delightful dish made from finely ground beef.

Ingredients
- 500 g of beef
- 1 onion
- 2 garlic cloves
- 1 tablespoon of vinegar
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 1 tablespoon of sugar
- 1 tablespoon of ground cumin
- 1 tablespoon of chopped parsley
- 1 tablespoon of chopped mint
- Olive oil for grilling
- 1 bay leaf
Method
- Finely chop the garlic and onion and add them to the ground beef in a bowl.
- Add the vinegar, salt, pepper, sugar, cumin, parsley, and mint to the bowl.
- Mix well to ensure all ingredients are well incorporated.
- Form the meat into small, perfect balls, about 2-3 cm in diameter.
- Grill the meat balls on the hottest part of the grill, turning often.
- Serve the kebabs with a leaf of bay and your favorite sauce.
The story
Kebab koobideh was introduced to Iran by the Mongols in the 13th century, but it gained its current popularity in Tehran in the 19th century.
