A classic of Iranian cuisine, Kebab Kambuzi is a delightfully marinated beef kebab, steeped in yogurt and spices for hours.

Ingredients
- 500 g of beef, cut into chunks
- 100 ml of Greek yogurt
- 2 tablespoons of white vinegar
- 2 tablespoons of lemon juice
- 2 tablespoons of olive oil
- 2 chopped onions
- 2 tablespoons of chopped dried dates
- 1 tablespoon of black pepper
- 1 tablespoon of sugar
- 1 tablespoon of salt
- 1 tablespoon of grated ginger
- Kambuzi spice mix (2 tablespoons)
Method
- Marinate the beef chunks in yogurt, white vinegar, lemon juice, olive oil, onions, dates, black pepper, sugar, salt, and ginger for at least 4 hours.
- Take a wooden skewer and thread the marinated meat onto it, forming a ring.
- Preheat the barbecue or wood-fired oven.
- Grill or cook the kebap for 15-20 minutes, turning frequently for even cooking.
- Serve hot with fresh bread and vegetables.
