Kapustnyak
A traditional Ukrainian dish, Kapustnyak is a hearty cabbage soup with crunchy, flavorful cabbage.

Ingredients
- 1 kg of red cabbage
- 2 garlic cloves
- 2 onions
- 2 zucchinis
- 1 liter of beef broth
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of balsamic vinegar
- 1 tablespoon of sugar

Method
- Cut the red cabbage into small pieces and set aside.
- In a large pot, heat the olive oil and sauté the finely chopped garlic and onions.
- Add the sliced zucchinis and sauté for 5 minutes.
- Add the shredded cabbage, beef broth, salt, pepper, balsamic vinegar, and sugar. Bring to a boil.
- Cook on medium heat for 30 minutes, stirring occasionally.
- Serve hot, garnished with fresh parsley.
- Serving suggestion: Serve with a slice of crusty bread.
