Ingredients

  • 4 chickens
  • 500 g potatoes
  • 3 carrots
  • 2 onions
  • 2 zucchinis
  • 1 onion
  • 2 pork dices
  • extra virgin olive oil
  • salt and pepper to taste
  • 1 lemon
  • 100 g chopped parsley

Method

  1. Prepare the chicken by cutting off the legs and tail, then brush it with olive oil, salt, and pepper.
  2. Wash and cut the vegetables into uniform pieces.
  3. In a large pan, add the vegetables and potatoes with a bit of olive oil, salt, and pepper, and cook over medium heat for 10 minutes.
  4. In a separate pan, cook the chicken with the pork dices for 15 minutes.
  5. Combine the vegetables and potatoes with the chicken, add the chopped parsley, and cook for another 20 minutes over medium heat, checking occasionally.
  6. Finally, pour the lemon juice over the chicken and serve hot.
  7. Let it rest for a few minutes before serving.
