Ingredients

  • 500 g of beef or chicken
  • 200 g of mixed vegetables (tomatoes, onions, peppers)
  • 1 liter of fish broth
  • 2 onions
  • 2 garlic cloves
  • 2 bell peppers
  • 1 tablespoon of cayenne pepper
  • 1 tablespoon of ginger
  • 1 tablespoon of wine vinegar
  • salt and pepper to taste
  • 200 g of red beans
  • 2 lavender leaves

Method

  1. Cut the beef or chicken into small pieces and fry them in a pan with oil until golden brown.
  2. Add the onions and garlic, sauté until they become golden brown.
  3. Add the peppers, mixed vegetables, and cayenne pepper, sauté for about 5 minutes.
  4. Add the fish broth, lavender leaves, cayenne pepper, ginger, and wine vinegar. Bring to a boil and simmer for 10 minutes.
  5. Add the red beans and cook for another 20 minutes or until the beans are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot with bread.

The story

Kaolack gombo is a traditional dish originating from the Kaolack region in southeastern Senegal. It was developed using leftover fish and local vegetables, becoming a popular family dish.
