Kaolack Gombo

A delicious and hearty stew made with vegetables and meat in fish broth, typical of the Kaolack region in Senegal.

Ingredients
- 500 g of beef or chicken
- 200 g of mixed vegetables (tomatoes, onions, peppers)
- 1 liter of fish broth
- 2 onions
- 2 garlic cloves
- 2 bell peppers
- 1 tablespoon of cayenne pepper
- 1 tablespoon of ginger
- 1 tablespoon of wine vinegar
- salt and pepper to taste
- 200 g of red beans
- 2 lavender leaves
Method
- Cut the beef or chicken into small pieces and fry them in a pan with oil until golden brown.
- Add the onions and garlic, sauté until they become golden brown.
- Add the peppers, mixed vegetables, and cayenne pepper, sauté for about 5 minutes.
- Add the fish broth, lavender leaves, cayenne pepper, ginger, and wine vinegar. Bring to a boil and simmer for 10 minutes.
- Add the red beans and cook for another 20 minutes or until the beans are tender.
- Season with salt and pepper to taste.
- Serve hot with bread.
The story
Kaolack gombo is a traditional dish originating from the Kaolack region in southeastern Senegal. It was developed using leftover fish and local vegetables, becoming a popular family dish.
