A delicious, crispy and flavorful crayfish dish, typical of the southern coast of South Africa.

Ingredients
- 400 g of crayfish
- 2 onions
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 1 tablespoon of black pepper
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 1 tablespoon of lemon juice
- 2 tablespoons of white wine vinegar
- 1 tablespoon of fresh thyme
- 1 tablespoon of fresh parsley
- 1 tablespoon of chili flakes
Method
- Clean and cut the crayfish into small pieces.
- In a pan, sauté the onions and garlic in olive oil.
- Add the crayfish pieces and cook for 5-7 minutes until golden.
- Add the black pepper, salt, sugar, lemon juice, and white wine vinegar.
- Stir well and cook for another 2-3 minutes until the sauce has evaporated.
- Add the fresh thyme, parsley, and chili flakes and stir once more.
- Serve immediately, hot.
