Kakanin
A traditional Filipino sweet made from sticky rice, crispy yet soft at the same time.

Ingredients
- 200g of glutinous rice
- 1 liter of water
- 100g of sugar
- 1 teaspoon of ground cinnamon
- 1 teaspoon of vanilla powder
- 50g of candied ginger
- 50g of pulled sugar
- 1 banana leaf for wrapping
Method
- Wash the glutinous rice and let it soak for 30 minutes.
- In a pot, stir the water, sugar, cinnamon, and vanilla for 10 minutes.
- Add the glutinous rice and cook over medium heat for 20 minutes, stirring occasionally.
- Wrap the rice in a banana leaf and form a rectangular packet.
- Cover the packets with parchment paper and steam in boiling water for 20 minutes.
- Let it cool down and cut it with a hot knife.
- Serve with pulled sugar and candied ginger on the side.

Kakanin is a traditional Filipino dessert that dates back to ancient times when the indigenous people of the Philippines used glutinous rice to make sweets like suman.
