Kairouan Samsa

A traditional Tunisian dessert from Kairouan, rich in flavor and decorated with confetti.

Ingredients
- 250g of phyllo dough
- 200g of milk chocolate
- 100g of chopped pistachios
- 50g of confetti
- 50g of sugar
- 1 tablespoon of milk
- 1 tablespoon of oil
- 1 egg
- 1 teaspoon of ground cinnamon
- 1 teaspoon of vanilla powder
Method
- Prepare the phyllo dough: cut the sheets into 10 cm squares.
- Form the samsa: put a bit of milk chocolate in the center of each square, add pistachios and confetti.
- Wrap the squares into a cone shape, sealing carefully.
- Brush the sheets with a mixture of egg and milk for a shiny appearance.
- Make a decorative cut on the top of each samsa.
- Make the glaze: mix sugar, oil, egg, cinnamon, and vanilla in a bowl.
- Gently dip the samsa into the glaze for a few seconds.
- Melt the chocolate and dip the samsa in the melted chocolate to decorate them.

Kairouan’s samsa has a history dating back to the Byzantine Empire, where it was believed to protect citizens from evil.
