Kabsa is a traditional Saudi Arabian dish consisting of roasted beef and spiced rice.

Ingredients

  • 500 g of beef cut into pieces
  • 200 g of Arabic rice
  • 2 onions
  • 2 garlic cloves
  • 200 ml of olive oil
  • 200 ml of beef broth
  • 100 ml of water
  • 1 teaspoon of black pepper
  • 1 teaspoon of ground ginger
  • 1 teaspoon of cardamom
  • 1 teaspoon of coriander
  • salt to taste

Method

  1. Slice the onions and garlic and sauté them in a large pan with olive oil.
  2. Add the beef and cook for a few minutes.
  3. Pour in the beef broth and water, add the black pepper, ginger, cardamom, and coriander.
  4. Bring to a boil, reduce the heat, and simmer on low heat for about 1 hour.
  5. In another pot, cook the rice with a little water and salt.
  6. When the beef is cooked, add the rice and gently mix.
  7. Cook for another 10-15 minutes or until the rice is al dente.
  8. Serve the Kabsa hot, garnished with some fresh ginger and coriander.

Kabsa has roots in the Arab world and has spread throughout the Middle East, including Saudi Arabia, where it has become a significant culinary and social dish.
