Kabab Barg is a traditional Iranian dish, featuring a crispy exterior and tender interior, typically served with bread and vegetables.

Ingredients
- 2 lbs of beef cut into pieces
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 2 tablespoons of vinegar
- 2 tablespoons of olive oil
- 1 large onion, chopped
- 2 cloves of garlic, chopped
- 1 teaspoon of red pepper
- 1 teaspoon of sugar
- 200 g of bread crumbs
- 100 ml of water
- 1 tablespoon of fresh thyme, chopped
Method
- Mix the salt, vinegar, olive oil, garlic, and red pepper in a bowl.
- Add the beef and mix well to ensure the seasonings are absorbed.
- In another bowl, mix the bread crumbs, water, pepper, sugar, and thyme.
- Combine the bread mixture with the meat and mix until a homogeneous mixture is formed.
- Form kababs with the resulting mixture and let them rest for at least 1 hour.
- Fry the kababs in a pan with hot oil until they become crispy and golden brown.
- Serve with bread and vegetables.
The story
Kabab Barg has its roots in northern Iran, particularly in Tehran, where it was long a popular dish among workers.
