Ingredients

  • 2 lbs of beef cut into pieces
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper
  • 2 tablespoons of vinegar
  • 2 tablespoons of olive oil
  • 1 large onion, chopped
  • 2 cloves of garlic, chopped
  • 1 teaspoon of red pepper
  • 1 teaspoon of sugar
  • 200 g of bread crumbs
  • 100 ml of water
  • 1 tablespoon of fresh thyme, chopped

Method

  1. Mix the salt, vinegar, olive oil, garlic, and red pepper in a bowl.
  2. Add the beef and mix well to ensure the seasonings are absorbed.
  3. In another bowl, mix the bread crumbs, water, pepper, sugar, and thyme.
  4. Combine the bread mixture with the meat and mix until a homogeneous mixture is formed.
  5. Form kababs with the resulting mixture and let them rest for at least 1 hour.
  6. Fry the kababs in a pan with hot oil until they become crispy and golden brown.
  7. Serve with bread and vegetables.

The story

Kabab Barg has its roots in northern Iran, particularly in Tehran, where it was long a popular dish among workers.
