Ingredients

  • 500g chicken breast cut into pieces
  • 1 large onion thinly sliced
  • 2 cloves of garlic smashed
  • 3-4 tablespoons sesame oil
  • 4 tablespoons soy sauce
  • 3 teaspoons black pepper ground
  • 1 teaspoon ginger powder
  • 200g fresh mushrooms sliced
  • 1 cup white miso
  • 1/4 teaspoon red chili paste (gochujang)
  • 3-4 cherry tomatoes halved

Method

  1. In a large pan, heat the sesame oil and sauté the onion until it turns golden brown.
  2. Add the chicken pieces and continue cooking until they start to whiten.
  3. Mix the soy sauce, black pepper ground, ginger powder with the cooked garlic. Pour this mixture into the pan and stir well to combine flavors.
  4. Add the fresh mushrooms and cook for 3-4 minutes until tender.
  5. Mix white miso with a little hot water to form a smooth paste. Add it to the pan, stir well, and simmer for another 2-3 minutes.
  6. Stir in red chili paste (gochujang) and halved cherry tomatoes. Cook until the chicken is cooked through.
