A classic of Lebanese cuisine, hummus bi zayt is a chickpea dip with olives and lemon juice.

Ingredients
- 400 g of chickpeas
- 2 tablespoons of olive oil
- 1 red onion
- 1 lemon
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 100 g of green olives
- 1 tablespoon of chopped parsley
- Water for boiling chickpeas
Method
- Boil the chickpeas with water and salt until tender. Let them cool down.
- Sauté the red onion in olive oil until golden brown.
- Simmer the lemon juice and salt in a separate pan.
- Place the chickpeas in a food processor or blender and add the sautéed onion oil.
- Transfer the mixture to a bowl and add the lemon juice, sugar, and parsley.
- Add the green olives and mix well.
- Serve fresh with bread slices or as a side dish with main courses.
