Ingredients

  • 400 g of chickpeas
  • 2 tablespoons of olive oil
  • 1 red onion
  • 1 lemon
  • 1 tablespoon of salt
  • 1 tablespoon of sugar
  • 100 g of green olives
  • 1 tablespoon of chopped parsley
  • Water for boiling chickpeas

Method

  1. Boil the chickpeas with water and salt until tender. Let them cool down.
  2. Sauté the red onion in olive oil until golden brown.
  3. Simmer the lemon juice and salt in a separate pan.
  4. Place the chickpeas in a food processor or blender and add the sautéed onion oil.
  5. Transfer the mixture to a bowl and add the lemon juice, sugar, and parsley.
  6. Add the green olives and mix well.
  7. Serve fresh with bread slices or as a side dish with main courses.
