Ingredients

  • 200 g of red bell peppers
  • 200 g of onions
  • 100 g of shiitake mushrooms
  • 200 ml of chicken broth
  • 100 ml of lemon juice
  • 2 tablespoons of soy sauce
  • 2 tablespoons of lime juice
  • 2 tablespoons of chili
  • 2 eggs
  • 2 tablespoons of rapeseed oil
  • Salt to taste
  • Chopped parsley for garnish

Method

  1. In a pan, sauté the bell peppers, onions, and mushrooms with rapeseed oil over medium heat.
  2. Add the chicken broth and lemon juice, let it boil for 10 minutes.
  3. While the broth is boiling, prepare the eggs: soak them in cold water, then crumble them.
  4. In a bowl, mix the soy sauce, lime juice, and chili.
  5. Add the crumbled eggs to the broth and gently stir.
  6. Boil for another 5 minutes, add salt to taste.
  7. Serve hot, garnished with chopped parsley.
