Holubtsi
Delicious cabbage rolls stuffed with rice, vegetables, and carrots, crunchy and exquisite.

Ingredients
- 2 lbs of onions
- 500 g of onions
- 2 onions
- 2 zucchini
- 2 carrots
- 200 g of rice
- 1 liter of beef broth
- 100 g of zucchini
- 100 g of carrots
- 10 cabbage leaves
- 100 g of butter
- Salt and pepper to taste
Method
- Chop the onions, zucchini, and carrots, then sauté them in a pan with butter.
- Rice the rice in a bowl and add it to the sautéed vegetables, mixing well.
- Bring the beef broth to a boil, then add the rice and cook on medium heat for 20 minutes.
- Wash and chop the cabbage leaves, then wrap each with the rice filling.
- Blanch the holubtsi in boiling water for 5 minutes, then place them in a pan with the beef broth.
- Cook on medium heat for 30-40 minutes until the holubtsi are tender.
- Serve hot with a carrot and zucchini sauce.
The story
Holubtsi are a traditional Ukrainian dish with origins dating back to ancient times, when farmers used cabbage leaves to wrap fillings of rice and vegetables, creating a nutritious and economical meal.
