Ingredients
- 4 herring fillets
- 100 ml olive oil
- 50 g pickled cucumbers
- 20 g chopped onion
- 10 g chopped parsley
- 10 g lemon powder
- Salt and pepper to taste
- 100 g cucumber
- 100 g tomato
- 10 g chopped garlic
- 10 g chopped onion
- 100 ml white wine
Method
- Prepare the herring fillets, washing them and removing the pinbones.
- In a pan, heat the olive oil and chopped onion, sautéing over medium heat for 5 minutes.
- Add the chopped garlic and sauté for another 2 minutes.
- Add the herring fillets, pickled cucumbers, chopped tomato, parsley, and salt and pepper, mix well.
- Pour in the white wine, bring to a boil and cook over medium heat for 10-15 minutes, until the fillets are cooked.
- Pour the broth over a plate and serve immediately with lemon powder.

The story
The Ijsselmeer Herring is a traditional dish with roots in the 17th century when local fishermen began salting and aromatizing the fish for preservation.
