Ingredients

  • 4 herring fillets
  • 100 ml olive oil
  • 50 g pickled cucumbers
  • 20 g chopped onion
  • 10 g chopped parsley
  • 10 g lemon powder
  • Salt and pepper to taste

  • 100 ml white wine

Method

  1. Prepare the herring fillets, washing them and removing the pinbones.
  2. In a pan, heat the olive oil and chopped onion, sautéing over medium heat for 5 minutes.
  3. Add the chopped garlic and sauté for another 2 minutes.
  4. Add the herring fillets, pickled cucumbers, chopped tomato, parsley, and salt and pepper, mix well.
  5. Pour in the white wine, bring to a boil and cook over medium heat for 10-15 minutes, until the fillets are cooked.
  6. Pour the broth over a plate and serve immediately with lemon powder.

The story

The Ijsselmeer Herring is a traditional dish with roots in the 17th century when local fishermen began salting and aromatizing the fish for preservation.
