Ingredients

  • 200g of flour
  • 150ml of warm water
  • 1 tablespoon of olive oil
  • 1/2 tablespoon of yeast
  • 1 tablespoon of salt
  • 1 tablespoon of semolina
  • 1 tablespoon of sugar
  • 2-3 tablespoons of water for maintaining crispiness

Method

  1. In a bowl, mix the flour, salt, semolina, and sugar.
  2. In another bowl, mix the warm water, olive oil, and yeast, then gradually add the flour until you get a homogeneous dough.
  3. Cover the dough with a cloth and let it rise for about 30 minutes.
  4. Divide the dough into small portions and form small balls.
  5. Squeeze the balls with your hands to form thin pancakes.
  6. Brush a baking tray with a little oil and place the pancakes on it.
  7. Sprinkle a little water on the pancakes to maintain their crispiness.
  8. Cook over medium heat for 5-7 minutes or until they turn golden and crispy.

Harsha has ancient roots tracing back to prehistoric civilizations but became particularly popular in Essaouira during the Ottoman period.
