Harira (soup)

Harira is a traditional Moroccan soup, rich in legumes and vegetables, offering a warm comfort on chilly days.

Ingredients
- 200 g of soybeans
- 100 g of lima beans
- 100 g of kidney beans
- 1 onion
- 2 carrots
- 2 celery stalks
- 2 tomatoes
- 1 liter of chicken broth
- 1 rabbit (or 100 g of rabbit meat)
- 2 tablespoons of mashed chickpeas
- 1 teaspoon of red pepper
- salt and pepper to taste
- 1 teaspoon of sugar
Method
- In a large pot, cook the soybeans, lima beans, and kidney beans in water for about 30 minutes.
- Dice the onion, carrots, celery, and tomatoes.
- In a second pot, sauté the onion in a bit of olive oil, then add the carrots, celery, and tomatoes.
- Add the chicken broth and rabbit, bringing to a boil.
- Add the cooked beans and mashed chickpeas, stir well, and cook for another 10-15 minutes.
- Season to taste with salt, pepper, and sugar.
- Serve hot, accompanied by homemade bread.
The story
Harira is a soup with ancient roots, found in many North African culinary traditions, but it is particularly popular in Casablanca, where it is considered a local specialty.
