Ingredients

  • 2 kg of beef cut into pieces
  • 2 kg of chicken cut into pieces
  • 2 kg of sweet potatoes halved
  • 2 kg of potatoes halved
  • 2 kg of squash halved
  • 2 kg of onions
  • 200 g of zucchini
  • 200 g of yellow squash
  • 100 g of olive oil
  • 100 g of sesame oil
  • salt and pepper to taste
  • 10 mint leaves

Method

  1. Dig a hole in the ground about 1 meter in diameter and 50 centimeters deep.
  2. Place a grate of banana or sugarcane leaves on top.
  3. Arrange the food on the banana leaves, covering it with additional leaves to insulate the food.
  4. Make a fire in the center of the hole and let it cool for about 30 minutes.
  5. Extinguish the fire and cover the hole with wet soil to maintain heat and cook the food for 4-6 hours.
  6. Once cooked, stop covering with soil and let it cool before serving.

The story

Hangi is an ancient practice dating back to the Maori, the first inhabitants of New Zealand, used for cooking foods like chicken, beef, and vegetables in a ground oven.
