Handi is a traditional Pakistani dish, flavored with curry and vegetables, served in a clay pot.

Ingredients
- 500 g of mixed vegetables (potatoes, pumpkin, carrots, onions)
- 200 g of beef or chicken
- 2 tablespoons of oil
- 2 chopped onions
- 2 bell peppers
- 1 tablespoon of red chili
- 1 teaspoon of cardamom
- 1 teaspoon of coriander
- 1 teaspoon of pepper
- 1/2 teaspoon of sugar
- 1 liter of water
Method
- Cut the vegetables and bell peppers into large pieces.
- In a large pan, sauté the onions in oil until they become golden.
- Add the cubed meat and cook for 5-7 minutes.
- Add the peppers, chili, cardamom, coriander, pepper, and sugar.
- Cover with water and let it boil for 20-30 minutes.
- Place the handi in a clay pot and cook over low heat for 1-2 hours.
- Serve hot, accompanied by bread or rice.
The story
Handi is a specialty dish from Peshawar, a city in northwest Pakistan, where it was developed to make use of local spices and seasonal vegetables.
