Ingredients

  • 500 g of mixed vegetables (potatoes, pumpkin, carrots, onions)
  • 200 g of beef or chicken
  • 2 tablespoons of oil
  • 2 chopped onions
  • 2 bell peppers
  • 1 tablespoon of red chili
  • 1 teaspoon of cardamom
  • 1 teaspoon of coriander
  • 1 teaspoon of pepper
  • 1/2 teaspoon of sugar
  • 1 liter of water

Method

  1. Cut the vegetables and bell peppers into large pieces.
  2. In a large pan, sauté the onions in oil until they become golden.
  3. Add the cubed meat and cook for 5-7 minutes.
  4. Add the peppers, chili, cardamom, coriander, pepper, and sugar.
  5. Cover with water and let it boil for 20-30 minutes.
  6. Place the handi in a clay pot and cook over low heat for 1-2 hours.
  7. Serve hot, accompanied by bread or rice.

The story

Handi is a specialty dish from Peshawar, a city in northwest Pakistan, where it was developed to make use of local spices and seasonal vegetables.
