Gombo
Kaolack — Mother recipe · en it
A delicious gombo with okra, vegetables, and meat, typical of the Kaolack region in Senegal.

Ingredients
- 200 g of okra
- 200 g of beef or chicken
- 1 onion
- 1 zucchini
- 1 chili pepper
- 1 tablespoon of Guinea pepper
- 200 ml of palm oil
- 1 liter of meat broth
- salt to taste
- 1 tablespoon of beef vinegar
- 1 tablespoon of chili powder
- 1 lemon
Method
- Cut the okra into small pieces and blanch in boiling water for 10 minutes.
- Dice the onion, garlic, zucchini, and chili pepper.
- In a pot, heat the palm oil and sauté the diced ingredients for 5 minutes.
- Add the meat, broth, Guinea pepper, salt, and chili powder. Bring to a boil and cook for 30 minutes.
- Finally, add the okra, beef vinegar, and lemon juice. Stir well and cook for another 15 minutes.
- Serve hot with bread.
The story
Gombo is a traditional Senegalese recipe, brought to the Kaolack region through colonization and slavery. Preparing gombo has become an important part of local culinary culture.
