Ingredients

  • 200 g of okra
  • 200 g of beef or chicken
  • 1 onion
  • 1 zucchini
  • 1 chili pepper
  • 1 tablespoon of Guinea pepper
  • 200 ml of palm oil
  • 1 liter of meat broth
  • salt to taste
  • 1 tablespoon of beef vinegar
  • 1 tablespoon of chili powder
  • 1 lemon

Method

  1. Cut the okra into small pieces and blanch in boiling water for 10 minutes.
  2. Dice the onion, garlic, zucchini, and chili pepper.
  3. In a pot, heat the palm oil and sauté the diced ingredients for 5 minutes.
  4. Add the meat, broth, Guinea pepper, salt, and chili powder. Bring to a boil and cook for 30 minutes.
  5. Finally, add the okra, beef vinegar, and lemon juice. Stir well and cook for another 15 minutes.
  6. Serve hot with bread.

The story

Gombo is a traditional Senegalese recipe, brought to the Kaolack region through colonization and slavery. Preparing gombo has become an important part of local culinary culture.
