Ingredients

  • 2 kg of potatoes
  • 1 onion
  • 100 g of Glarner cheese
  • 100 g of butter
  • salt and pepper to taste
  • oil for frying
  • 1 egg (optional)

Method

  1. Peel the potatoes, cut them into pieces, and cook them in boiling water for 10-15 minutes until they are soft.
  2. Drain the potatoes and let them cool. Then, pass them through a sieve to get a smooth consistency.
  3. While the potatoes cool, peel and slice the onion.
  4. In a bowl, mix the potatoes, onion, Glarner cheese, butter, salt, and pepper.
  5. If desired, add an egg to make the rösti lighter.
  6. Shape the mixture into flat patties and fry in a deep pan with hot oil until golden.
  7. Serve the Glarner Rösti hot with a bit of butter and pepper.
