Glarner Rösti

Ingredients
- 2 kg of potatoes
- 1 onion
- 100 g of Glarner cheese
- 100 g of butter
- salt and pepper to taste
- oil for frying
- 1 egg (optional)
Method
- Peel the potatoes, cut them into pieces, and cook them in boiling water for 10-15 minutes until they are soft.
- Drain the potatoes and let them cool. Then, pass them through a sieve to get a smooth consistency.
- While the potatoes cool, peel and slice the onion.
- In a bowl, mix the potatoes, onion, Glarner cheese, butter, salt, and pepper.
- If desired, add an egg to make the rösti lighter.
- Shape the mixture into flat patties and fry in a deep pan with hot oil until golden.
- Serve the Glarner Rösti hot with a bit of butter and pepper.
