A traditional Greek dish that combines vegetables and meat in one flavorful and satisfying meal.

Ingredients
- 2 kg of eggplants, halved
- 500 g of beef
- 200 g of seasonal vegetables (tomatoes, onions, zucchinis)
- 1 onion
- 200 g of rice
- 200 ml of cane sugar
- 300 ml of water
- 100 ml of olive oil
- 100 ml of white wine
- salt and pepper to taste
- seasoning to taste (bay leaf, thyme)
Method
- Slice the eggplants in half and remove the seeds. Salt them and let them sit for 30 minutes.
- In a pan, sauté the olive oil with the garlic and onion. Add the beef and cook over medium heat for 10 minutes.
- Add the chopped vegetables, rice, salt, pepper, and seasoning. Mix well.
- Pour in the water and white wine. Cover and cook over low heat for 20-25 minutes.
- In a separate pan, cook the eggplants for 10 minutes. Remove the skin and fill with the prepared sauce.
- Bake at 180°C for 30-40 minutes, until the surface turns golden.
- Serve hot with a drizzle of olive oil and a sprinkle of chopped parsley.
