Ingredients

  • 2 kg of eggplants, halved
  • 500 g of beef
  • 200 g of seasonal vegetables (tomatoes, onions, zucchinis)
  • 1 onion
  • 200 g of rice
  • 200 ml of cane sugar
  • 300 ml of water
  • 100 ml of olive oil
  • 100 ml of white wine
  • salt and pepper to taste
  • seasoning to taste (bay leaf, thyme)

Method

  1. Slice the eggplants in half and remove the seeds. Salt them and let them sit for 30 minutes.
  2. In a pan, sauté the olive oil with the garlic and onion. Add the beef and cook over medium heat for 10 minutes.
  3. Add the chopped vegetables, rice, salt, pepper, and seasoning. Mix well.
  4. Pour in the water and white wine. Cover and cook over low heat for 20-25 minutes.
  5. In a separate pan, cook the eggplants for 10 minutes. Remove the skin and fill with the prepared sauce.
  6. Bake at 180°C for 30-40 minutes, until the surface turns golden.
  7. Serve hot with a drizzle of olive oil and a sprinkle of chopped parsley.
