A traditional Genoese sweet, furnace bananas are crunchy on the outside and soft on the inside, best enjoyed warm with a sour cream sauce.

Ingredients
- 4 ripe bananas
- 100g sugar
- 50g butter
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- Sour cream for serving
Method
- Prepare the bananas by cutting the ends and placing a spoonful of sugar on each.
- Fry the bananas in a pan with the remaining butter for 2-3 minutes on each side.
- In a pan, mix the remaining butter with sugar, cinnamon, and vanilla.
- Add the fried bananas to the pan and cook for 2-3 minutes until caramelized.
- Serve the baked bananas hot with sour cream.

The story
Furnace bananas were invented during wartime when Genoese people, to prolong the life of their bananas, would coat them in sugar and bake them in the oven. Today, this delightful treat is celebrated throughout Liguria.
