A traditional Ethiopian dish, the Ful Medames from Dire Dawa is a delicious mix of beans with aromatic herbs and spices.

Ingredients
- 200 g of chickpeas
- 3 onions
- 1 chili pepper
- 2 tablespoons of olive oil
- 2 tablespoons of tahini
- 1 tablespoon of wine vinegar
- 1 tablespoon of lemon juice
- 1 tablespoon of sesame oil
- Salt and pepper to taste
- 1 tablespoon of chopped onion
- 1 tablespoon of chopped mint
- 1 tablespoon of chopped cilantro
Method
- Rinse the chickpeas well and cook them in salted water for about 1 hour or until they are soft.
- In a pan, sauté the chili pepper and onions in olive oil.
- Add the tahini, wine vinegar, lemon juice, sesame oil, salt, and pepper and mix well.
- Layer the chickpeas with the sauce and add the chopped onion, mint, and cilantro.
- Let it rest for at least 30 minutes before serving.
- Serve the Ful Medames warm with toasted bread.
The story
Ful Medames is a traditional Ethiopian dish, but in Dire Dawa, a city in northeastern Ethiopia, it has become particularly popular with a richer and more flavorful version.
