Ingredients

  • 200 g of chickpeas
  • 3 onions
  • 1 chili pepper
  • 2 tablespoons of olive oil
  • 2 tablespoons of tahini
  • 1 tablespoon of wine vinegar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of sesame oil
  • Salt and pepper to taste
  • 1 tablespoon of chopped onion
  • 1 tablespoon of chopped mint
  • 1 tablespoon of chopped cilantro

Method

  1. Rinse the chickpeas well and cook them in salted water for about 1 hour or until they are soft.
  2. In a pan, sauté the chili pepper and onions in olive oil.
  3. Add the tahini, wine vinegar, lemon juice, sesame oil, salt, and pepper and mix well.
  4. Layer the chickpeas with the sauce and add the chopped onion, mint, and cilantro.
  5. Let it rest for at least 30 minutes before serving.
  6. Serve the Ful Medames warm with toasted bread.

The story

Ful Medames is a traditional Ethiopian dish, but in Dire Dawa, a city in northeastern Ethiopia, it has become particularly popular with a richer and more flavorful version.
