Fried Snapper
A classic Jamaican dish, fried snapper is crispy on the outside and tender on the inside.

Ingredients
- 4 snapper fillets
- 1 cup all-purpose flour
- 1 cup sour cream
- 1/2 cup sugar
- 1/2 cup salt
- 1/4 cup black pepper
- 2 tablespoons cane sugar
- oil for frying
- kosher salt for finishing
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 tomato, chopped
Method
- Take the snapper fillets and pat them dry with a paper towel.
- In a bowl, mix the flour, sugar, salt, and black pepper.
- In another bowl, mix the sour cream and cane sugar.
- Dip the snapper fillets in the sour cream, then coat them in the flour mixture.
- Fry in plenty of oil over medium-high heat until golden brown.
- Drain and pat dry on paper towels.
- In a pan, sauté the chopped onion, red bell pepper, and tomato in a bit of oil.
- Once the sauce is ready, add the fried snapper fillets and season with salt.
