Fried Flying Fish

Ingredients
- 4 flying fish fillets
- 1 onion
- 2 garlic cloves
- 2 tablespoons of palm oil
- 1 tablespoon of sugar
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of salt
- 1 lemon
- Lime juice to taste
Method
- Take the flying fish fillets and clean them carefully, removing the spines and pieces of skin.
- Chop the garlic and onion and sauté them in a pan with palm oil for 2-3 minutes until they turn golden.
- Add the fish and cook for 3-4 minutes on each side, until it is well cooked.
- In another bowl, mix the sugar, black pepper, and salt.
- Dredge the fish in the seasoned bowl, making sure it is well coated.
- Squeeze the lemon and add the lime juice to the fish.
- Serve hot, accompanied by a lime juice sauce.
