Ingredients

  • 4 flying fish fillets
  • 1 onion
  • 2 garlic cloves
  • 2 tablespoons of palm oil
  • 1 tablespoon of sugar
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of salt
  • 1 lemon
  • Lime juice to taste

Method

  1. Take the flying fish fillets and clean them carefully, removing the spines and pieces of skin.
  2. Chop the garlic and onion and sauté them in a pan with palm oil for 2-3 minutes until they turn golden.
  3. Add the fish and cook for 3-4 minutes on each side, until it is well cooked.
  4. In another bowl, mix the sugar, black pepper, and salt.
  5. Dredge the fish in the seasoned bowl, making sure it is well coated.
  6. Squeeze the lemon and add the lime juice to the fish.
  7. Serve hot, accompanied by a lime juice sauce.
