Fried Artichokes

This traditional Pescara dish is a crispy and flavorful delight, perfect to start a Mediterranean-style meal.

Ingredients
- 4 artichokes
- 100g of flour
- 1 egg
- 50g of olive oil
- salt to taste
- 1 teaspoon of black pepper
- Cold water for blanching
- Sugar for blanching
Method
- Preheat the oven to 180°C.
- Clean the artichokes, cut them into quarters, and blanch them in salted water with a pinch of sugar.
- In a bowl, mix the flour, olive oil, egg, and salt.
- Dip each piece of artichoke into the mixture, making sure it is well coated.
- Fry the artichokes in a pan with plenty of olive oil over medium-high heat.
- When they are golden, remove the artichokes from the paper towel and place them on a baking sheet.
- Repeat the process with the remaining artichoke pieces.
- Serve hot, accompanied by a yolk sauce and lemon if desired.
The story
Fried artichokes are a traditional dish from the Molise region, with a history dating back to times when food was prepared in advance for the next day. In Pescara, this recipe is particularly appreciated during late spring celebrations.
