Ingredients

  • 250 g of chickpeas
  • 100 g of green olives
  • 1 onion
  • 3 dates
  • 2 garlic cloves
  • 2 tablespoons of olive oil
  • salt to taste
  • 1 lemon
  • Water to cover the chickpeas
  • 1 tablespoon of saffron (optional)

Method

  1. Rinse the chickpeas and cook them in boiling water for 1-2 hours until they are soft.
  2. In a pan, heat the olive oil and sauté the garlic and onion until they become golden.
  3. Add the chickpeas, olives, dates, and salt, stir well.
  4. Reduce the heat and let the contents of the pan cool down.
  5. Finally, add the saffron (if using) and lemon juice, stir, and serve.
  6. You can serve your Foul Medames with a linen napkin to wipe your mouth.
