Foul Medames with Olives

A delicious and traditional chickpea soup with olives, served for lunch in Beirut.

Ingredients
- 250 g of chickpeas
- 100 g of green olives
- 1 onion
- 3 dates
- 2 garlic cloves
- 2 tablespoons of olive oil
- salt to taste
- 1 lemon
- Water to cover the chickpeas
- 1 tablespoon of saffron (optional)
Method
- Rinse the chickpeas and cook them in boiling water for 1-2 hours until they are soft.
- In a pan, heat the olive oil and sauté the garlic and onion until they become golden.
- Add the chickpeas, olives, dates, and salt, stir well.
- Reduce the heat and let the contents of the pan cool down.
- Finally, add the saffron (if using) and lemon juice, stir, and serve.
- You can serve your Foul Medames with a linen napkin to wipe your mouth.
