A classic of Sardinian cuisine, Su Bagnu di Pesce is a simple yet delicious fish stew.

Ingredients
- 400 g of mixed fish (e.g., tuna, salmon, mackerel)
- 200 ml of olive oil
- 1 onion
- 2 cloves of garlic
- 2 ripe tomatoes
- 1 liter of fish broth
- 100 g of beans
- 100 g of peppers
- salt and pepper to taste
- 2 tablespoons of chopped parsley
- 1 lemon
- 100 g of farro
Method
- In a pot, sauté the olive oil with finely chopped onion and garlic.
- Add the cubed peppers and tomatoes, sauté for a few minutes.
- Add the cut fish and fish broth, bring to a boil and simmer on medium heat for 20-25 minutes.
- Add the beans and farro, cook for another 10-15 minutes.
- Finally, season with salt and pepper to taste, chop the parsley and lemon juice, mix well and serve.
- Serving suggestion: Serve the Su Bagnu di Pesce hot with a slice of bread or toasted bread.
The story
Su Bagnu di Pesce is a culinary tradition dating back to ancient times, when the fishermen of Olbia-Tempio would prepare their fish directly over the fire.
