Ingredients

  • 400 g of mixed fish (e.g., tuna, salmon, mackerel)
  • 200 ml of olive oil
  • 1 onion
  • 2 cloves of garlic
  • 2 ripe tomatoes
  • 1 liter of fish broth
  • 100 g of beans
  • 100 g of peppers
  • salt and pepper to taste
  • 2 tablespoons of chopped parsley
  • 1 lemon
  • 100 g of farro

Method

  1. In a pot, sauté the olive oil with finely chopped onion and garlic.
  2. Add the cubed peppers and tomatoes, sauté for a few minutes.
  3. Add the cut fish and fish broth, bring to a boil and simmer on medium heat for 20-25 minutes.
  4. Add the beans and farro, cook for another 10-15 minutes.
  5. Finally, season with salt and pepper to taste, chop the parsley and lemon juice, mix well and serve.
  6. Serving suggestion: Serve the Su Bagnu di Pesce hot with a slice of bread or toasted bread.

The story

Su Bagnu di Pesce is a culinary tradition dating back to ancient times, when the fishermen of Olbia-Tempio would prepare their fish directly over the fire.
