Fish Empanada

Flavorful and crispy, this Galician fish empanada is made with fish fillets and spinach, a traditional dish.

Ingredients
- 400g of fish fillets (e.g., salmon or tuna)
- 100g of fresh spinach
- 1 medium potato
- 1 egg
- 1 onion
- 100g of grated cheese
- 50g of chopped parsley
- 50g of flour
- 100ml of vegetable oil
- Salt and pepper to taste
- Flour for frying
Method
- Prepare the filling: dice the potato into cubes, cook in salted water, drain and let it cool down.
- In a bowl, mix the fish fillets cut into pieces, chopped spinach, chopped onion, grated cheese, chopped parsley, salt, and pepper.
- Add the cooled potato and mix well.
- Form the pastries: with the frying flour, make a small mound and make a hole in the middle. Add a bit of the filling, gather the edges and close the pastry.
- Fry the empanadas in hot oil, turning them to get a uniform crust.
- Serve hot with a bit of tomato sauce or soy sauce.
