Ingredients

  • 200 g of chickpeas
  • 1 onion
  • 2 carrots
  • 1 zucchini
  • 1 chili pepper
  • 2 tablespoons of olive oil
  • 1 tablespoon of Cayenne pepper
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of chili powder
  • Water to cover the chickpeas
  • Salt to taste
  • 1 teaspoon of sugar

Method

  1. Rinse the chickpeas and boil them for 10 minutes. Peel and dice the onion.
  2. In a pot, sauté the onion with olive oil until it turns golden.
  3. Add the diced carrots, chili pepper, turmeric, and chili powder. Stir well.
  4. Add the boiled chickpeas and cover with water. Bring to a boil and cook on medium heat for 30 minutes.
  5. Grind the chili pepper with a pestle or mixer and add it to the broth along with salt and sugar. Stir well.
  6. Continue cooking for another 15 minutes, checking the water absorption and adding more if needed.
  7. Serve hot, accompanied by toasted bread.
