Fasolia
A delicious chickpea stew with vegetables and spices, typical of Ethiopian cuisine.

Ingredients
- 200 g of chickpeas
- 1 onion
- 2 carrots
- 1 zucchini
- 1 chili pepper
- 2 tablespoons of olive oil
- 1 tablespoon of Cayenne pepper
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of chili powder
- Water to cover the chickpeas
- Salt to taste
- 1 teaspoon of sugar
Method
- Rinse the chickpeas and boil them for 10 minutes. Peel and dice the onion.
- In a pot, sauté the onion with olive oil until it turns golden.
- Add the diced carrots, chili pepper, turmeric, and chili powder. Stir well.
- Add the boiled chickpeas and cover with water. Bring to a boil and cook on medium heat for 30 minutes.
- Grind the chili pepper with a pestle or mixer and add it to the broth along with salt and sugar. Stir well.
- Continue cooking for another 15 minutes, checking the water absorption and adding more if needed.
- Serve hot, accompanied by toasted bread.
