Ingredients

  • 250 g of chickpea flour
  • 500 ml of water
  • 2 ripe tomatoes
  • 1 onion
  • 1 tablespoon of extra virgin olive oil
  • Salt to taste
  • 1 tablespoon of fresh basil, chopped
  • 1 egg (optional)

Method

  1. Mix the chickpea flour with warm water until you get a smooth batter.
  2. Peel and chop the onion, sauté it in a pan with extra virgin olive oil.
  3. Peel the tomatoes, cut them into pieces, and add them to the chickpea batter.
  4. Add salt and fresh basil, mix well.
  5. If necessary, add a bit of water to get a smooth consistency.
  6. Bake the farinata on a baking tray in a preheated oven at 200°C for 15-20 minutes, until golden.
  7. Remove from the oven and let it cool for a few minutes before serving.

The story

Farinata is an ancient Ligurian dish dating back to Roman and Byzantine times, when chickpea flour was a cost-effective and nutritious choice.
