A delicious and light Genoese flatbread made at home with chickpea flour and tomato.

Ingredients
- 250 g of chickpea flour
- 500 ml of water
- 2 ripe tomatoes
- 1 onion
- 1 tablespoon of extra virgin olive oil
- Salt to taste
- 1 tablespoon of fresh basil, chopped
- 1 egg (optional)
Method
- Mix the chickpea flour with warm water until you get a smooth batter.
- Peel and chop the onion, sauté it in a pan with extra virgin olive oil.
- Peel the tomatoes, cut them into pieces, and add them to the chickpea batter.
- Add salt and fresh basil, mix well.
- If necessary, add a bit of water to get a smooth consistency.
- Bake the farinata on a baking tray in a preheated oven at 200°C for 15-20 minutes, until golden.
- Remove from the oven and let it cool for a few minutes before serving.
The story
Farinata is an ancient Ligurian dish dating back to Roman and Byzantine times, when chickpea flour was a cost-effective and nutritious choice.
