Falafel

This Egyptian dish is crispy and delicious, perfect for a midday meal.

Ingredients
- 200g of dried chickpeas
- 1 onion
- 2 garlic cloves
- 1 teaspoon of coriander
- 1 teaspoon of cayenne pepper
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 2 eggs
- 100g of fried onion
- 1 teaspoon of apple cider vinegar
- 1 teaspoon of sesame oil
- Oil for frying
Method
- Rinse the dried chickpeas, soak them and let them sit for 4-6 hours.
- Dice the onion and garlic and add them to a bowl.
- Crush the chickpeas and mix them with the diced onion and garlic, mixing well.
- Add the coriander, cayenne pepper, salt, and sugar, mix again.
- In another bowl, beat the eggs, then add the chickpea mixture and mix until you get a homogeneous paste.
- Add the fried onion, apple cider vinegar, and sesame oil, mix to integrate.
- Fry the falafel croquettes in a pan with hot oil until they become crispy.
- Serve with a bed of cucumber salad and tahini sauce.
The story
Falafel originated in Egypt and are said to have started as a way to preserve chickpeas, later evolving into a popular dish.
