Ingredients
- 2 fish fillets (e.g., salmon or tuna)
- 1 onion
- 1 zucchini
- 1 chili pepper
- 1 tablespoon white vinegar
- 1/2 cup sugar
- 1/4 cup palm oil
- 1 tablespoon soy sauce
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup chopped vegetables (e.g., carrots, red onion)
- 1 cup sweet potato cubes
Method
- Clean the fish fillets and cut them into small pieces.
- In a pan, mix the palm oil with sugar and white vinegar.
- Add soy sauce, black pepper, and salt.
- Fry the onion and chili pepper in a bit of palm oil until they turn golden.
- Add the fish and chopped vegetables, fry for 5-7 minutes or until the fish becomes crispy.
- Serve the escovitch fish hot with sweet potato cubes.
- Enjoy the dish as an appetizer or as a side to a main meal.
