These traditional Galician Empanadas de Pavo are crispy and delicious, filled with succulent roasted chicken.

Ingredients

  • 200g of flour
  • 100g of butter
  • 1 egg
  • 500g of roasted and chopped chicken
  • 1 chopped onion
  • 1 garlic clove
  • 100g of grated sheep cheese
  • salt and pepper to taste
  • oil for frying

Method

  1. In a large bowl, mix the flour with melted butter and beaten egg until you get a homogeneous dough.
  2. Meanwhile, in a pan, sauté the chopped onion and garlic in a bit of oil.
  3. Add the chopped chicken and cook for 5-7 minutes, adding salt and pepper to taste.
  4. In another bowl, mix the grated sheep cheese with the cooked chicken.
  5. Prepare the empanadas by mixing the dough in small portions and forming sheets.
  6. Fill the sheets with the chicken and cheese mixture, close and pinch the edges.
  7. Fry the empanadas in plenty of hot oil until they become golden.
  8. Place the empanadas on a paper towel to drain and cool before serving.

The story

Empanadas de Pavo were introduced to Galicia by Arab traders, who adapted them to the local taste with ingredients like chicken.
