Ingredients

  • 300 g of peas
  • 2 onions
  • 4 carrots
  • 2 celery stalks
  • 200 g of bacon
  • 2 liters of beef broth
  • 1 teaspoon of black pepper
  • 1 teaspoon of nutmeg
  • Salt to taste
  • 1 tablespoon of olive oil
  • 100 g of chopped parsley

Method

  1. In a large pot, sauté the bacon in olive oil.
  2. Add the onions, carrots, and celery, and sauté over medium heat for about 10 minutes.
  3. Add the peas and beef broth, bring to a boil, then reduce heat and simmer for 30 minutes.
  4. While the soup is simmering, crush the black pepper and nutmeg.
  5. Add the crushed spices and salt to taste.
  6. Finally, stir in the chopped parsley and serve hot.
  7. A perfect blend of flavors and warmth for the cold winter months.
