Dutch Pea Soup (Erwtensoep)

Ingredients
- 300 g of peas
- 2 onions
- 4 carrots
- 2 celery stalks
- 200 g of bacon
- 2 liters of beef broth
- 1 teaspoon of black pepper
- 1 teaspoon of nutmeg
- Salt to taste
- 1 tablespoon of olive oil
- 100 g of chopped parsley
Method
- In a large pot, sauté the bacon in olive oil.
- Add the onions, carrots, and celery, and sauté over medium heat for about 10 minutes.
- Add the peas and beef broth, bring to a boil, then reduce heat and simmer for 30 minutes.
- While the soup is simmering, crush the black pepper and nutmeg.
- Add the crushed spices and salt to taste.
- Finally, stir in the chopped parsley and serve hot.
