Ingredients

  • 2 kg of veal meat
  • 500 g of chicken
  • 200 g of bacon
  • 2 onions
  • 2 spring onions
  • 1 red onion
  • 100 g of peppers
  • 1 liter of chicken broth
  • 100 ml of white wine
  • 300 g of zucchini
  • 100 g of potatoes
  • 100 g of carrots

Method

  1. Prepare the veal and chicken, cutting them into small pieces.
  2. In a pot, cook the veal and chicken with the broth, white wine, and herbs.
  3. Chop the onions, spring onions, and red onion into cubes.
  4. Add the chopped vegetables to the pot and cook over medium heat for 20 minutes.
  5. Cut the zucchini, potatoes, and carrots into cubes and add them to the pot.
  6. Continue cooking for another 30 minutes, stirring occasionally.
  7. Serve hot with baked potatoes or a salad.

Originally from Scotland, haggis has been adapted in Dunedin, New Zealand, to suit local tastes.
