Drisheen
A traditional Irish dish, drisheen is a delightful delicacy made from pig's stomach, crispy and delicious.

Ingredients
- 2 pig's stomachs
- 1 liter of water
- 1 onion
- 1 green pepper
- 200 g of potatoes
- 100 g of onions
- 500 g of pork fat
- 2 bay leaves
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 1 teaspoon of wine vinegar
Method
- Empty and clean the pig's stomachs, then cook in boiling water for 10-15 minutes.
- In a pot, add the pork fat and cook on medium heat for 10 minutes.
- Add the onions and green pepper, cook for another 5 minutes.
- Add the potatoes, bay leaves, black pepper, salt, and wine vinegar, stir well.
- Cover and cook on medium heat for 20-25 minutes, check for doneness.
- Serve hot with a bit of salt and pepper.

Drisheen is a traditional Cork, Ireland, dish with roots dating back to the 17th century, originally a way to utilize less favored parts of the pig.
